My recipes and cooking are the souvenirs I bring home from my travels. The cuisine and marketplaces in the many countries I’ve visited inspire my recipes. And like most people, I love to share my memories with my friends and family.
I have a lemon tree, and it likes to give me a lot of lemons. I make Limoncello, lemon bars, chicken with artichokes and lemons, lemon pasta, etc. Whatever you can think of to cook with these fruits, we've tried it at my house.
I first fell in love with Limoncello on a breezy summer day on the Amalfi coast. This is not unique, I think this is where nearly everyone falls for this lovely liqueur. As you drive the roads that weave their way through the towns that hang off the cliffs of Amalfi, you see lemon trees everywhere.
Enchiladas in Red Sauce are an excellent choice if you are called on to make a main for the potluck. If your household is just two people like mine, then you have leftovers. These leftovers can be packaged up, labeled, and placed in the freezer for when you don’t want to cook!
